Last spring, I spent a week on the island of Roatan off Honduras, at the family-run CoCo View dive resort. The resort is an informal place and tries to keep things friendly. And so the gift shop runs on the honor system. If you want to buy a T-shirt or necklace, just take what you want and record your purchase on a clipboard. Some years back, the resort also accepted personal checks for full payment, a practice the U.S. lodging industry hasn't followed for decades. But no longer.
